Winner Winner Chicken Dinner  Buttermilk Brined Roast Chicken By Samin Nosrat I am going to do this for the Christmas Turkey. This Buttermilk-Brined Roast Chicken of marinating chicken in buttermilk before roasting takes roasting to the next level. The buttermilk acts as a brine, tenderizing the meat and infusing it with flavor for an incredibly juicy result. Plus, the natural sugars in the buttermilk caramelize during cooking, creating perfectly golden, crispy skin. For best results, marinate the chicken for 24 hours before roasting. This roast chicken is simple, flavorful, and perfect for any occasion! Ingredients: Organic Free Range Chicken 2 cups buttermilk 2 tbspn sea salt  1.	Prep the Chicken (Night Before): Cut off the wingtips and save them for stock/Gravy. Season the chicken with salt and let it sit for 30 minutes. 2.	Make the Brine: Mix 2 tablespoons of salt into the buttermilk. Place the chicken in brine in a resealable plastic bag. Seal the bag tightly, making sure the chicken is coated.  3.	Marinate: Put the bag on a plate/Bowl and refrigerate for 12–24 hours. Turn the bag occasionally if you like, but it’s not necessary I don’t have a fan / normal oven (I have an aga) so I couldn’t follow the following steps / temp - so these are instructions from NYT) 4.	Prepare for Roasting: Take the chicken out of the fridge an hour before cooking. Preheat your oven to 220°C / 420°F with the rack in the center. 5.	Get the Chicken Ready: Remove the chicken from the bag and scrape off any excess buttermilk. Bind legs together and place the chicken in roasting pan. (This is where I roast first upside down to allow the juices and fat from the thighs/back drip down into the breast - and not just into the pan)  6.	Roast: Place the pan in the oven, positioning the legs toward the back corner and the breast toward the center. Roast for 20 minutes until it starts browning, then lower the oven to 200°C / 400°F and roast for 10 more minutes. 7.	Finish Cooking: Rotate the pan so the legs face the other back corner. Roast for about 30 more minutes, or until the chicken is golden brown and the juices run clear. Use foil to cover the chicken if it browns too quickly. (I usually check a chicken is done by twisting its leg - if it falls off easily then it’s ready to go- because legs were bound I used a thermometer)  	8.	Rest and Serve: Let the chicken rest for 10 minutes before carving.
